Lemon Muddy Buddies

It’s possible that I might have told a few…er…hundred…people how much I love lemony food. My friend Rachel brings me lemons, my BIL’s sister brings me lemons, and now I have a few women at Kindergarten bringing me lemons.

I used to think they were doing me a favor, but I’m onto you ladies! They’re really doing themselves a favor. Because when you have 50 lemons, it’s unlikely you’ll use them all before some start going bad.

But…um…so I have all these lemons. Which leaves me thinking up new lemon recipes. Because I can’t stand the idea of them going bad.

Haley has also informed me that she’s tired of the snacks I’m giving her for school. Because, you know, white chocolate macadamia nut granola bars, dill pickle cashews, and kettle corn are so played out. Poor baby, right? Sigh. I do suppose after six months, she’s due for something new.

So I made Lemon Muddy Buddies. Shoveled handfuls into my own mouth. Got the thumbs up. Shoveled more into my pie hole. Packaged remainder into little baggies for her. All good.

Have you ever had muddies buddies (also known as puppy chow)? They’re crazy easy and crazy good. Too good! Hard to stop eating them.

you only need a few simple ingredients

  • Rice Chex cereal
  • white chocolate chips
  • unsalted butter
  • lemons
  • powdered sugar

Considering I only used two lemons, I imagine I’ll be making 63 more cups. Or until she’s “tired” of them, but I don’t see that ever happening, because MUDDY BUDDIES.

Lemon Muddy Buddies

15-minute Lemon Muddy Buddies with Rice Chex cereal, white chocolate, lemon juice, and lemon zest. Try not to eat all of it in one sitting!

  • 12 ounce box Rice Chex cereal
  • 2 cups powdered sugar
  • 11/4  cups white chocolate chips
  • 1/4 cup unsalted butter
  • 2 tablespoons lemon zest
  • 3 tablespoons lemon juice


  • Pour cereal into a large mixing bowl and set aside.
  • Pour the powdered sugar into a 2-gallon re-sealable food storage plastic bag and set aside.
  • Place white chocolate chips, butter, lemon zest, and lemon juice in a microwave-safe bowl; microwave on high for 45 seconds; stir. Continue to microwave in 15 second intervals until the chocolate has melted and the mixture can be stirred smooth.
  • Pour half the melted chocolate mixture over the top of the cereal, gently fold with a spatula. Poor the remaining mixture over the top and fold gently to combine (doing this in two steps helps make sure all the cereal is evenly coated.)
  • Transfer the coated cereal to the bag with the powdered sugar; seal bag and gently toss until all the cereal is well-coated.
  • Try not to eat all of it in one sitting!
