Quick and easy salmon cracker recipe

You’ve probably already discovered how much I love Sriracha through my sticky honey sriracha bird bites and sweet and spicy Korean meatballs! I’ll admit it’s kind of an obsession that I have with something Sriracha. Because it is not only a delicious and wonderful condiment, but also a great way to add some addictive spice to any dish with very little effort.

Sriracha is basically hot and sour peppers in the form of vinegar, garlic, sugar, and salt. It’s a perfectly balanced sauce that goes all-out to enhance the taste and spiciness of any dish.

This salmon recipe uses sriracha crackers to take an easy baked fish dish to the next level by marinating it in a highly spiced mixture of sriracha, whipped chilies, soy sauce, sugar, garlic, and ginger. The marinade gives the fish intense layers of flavor before it is baked and served with sparkling chopped green onions. It’s a short and easy-to-prepare dish that’s not always complex in any way, but is complex in flavor and ready to serve in just 25 minutes!

  • Salmon –  You will need a large, skinless salmon fillet for this recipe. Salmon with skin on is also an option if you prefer. You can also use individual slices that have the same total weight as one slice.
  • Green Onions –  Also called scallions, this is used to garnish the spicy salmon.

  • Garlic  – I like fresh minced garlic for the more robust garlic flavor, but you can also use minced garlic as well. Just make sure the jar doesn’t sit in the fridge for too long as the garlic will start to bitter over time. 
  • Ginger  – Freshly minced ginger is the perfect choice on jars. Like canned garlic, minced ginger is not so good after being opened for a while.
  • Olive Oil –  I like to use olive oil for salmon, but you can also use any type of vegetable oil such as canola, grapeseed, or soybean.
  • Soy Sauce  – Low-sodium soy sauce is the best choice for adding delicious soy flavor, while controlling the salt level. 
  • Brown Sugar –  For a touch of sweetness, brown sugar helps balance out the spicy flavour. You can also use white sugar, honey, or agave if you prefer. 
  • Red Pepper Flakes –  You want crushed red pepper flakes for the seasoning.
  • Sriracha   –  This is the main ingredient in this dish. You can now buy Sriracha at any grocery store nowadays or substitute it for your favorite hot sauce. 
  • Black Pepper –  For another layer of spice, add ground black pepper to the marinade.

How to make salmon firecrackers

Soak salmon

  1. Make a fireworks sauce. Mix all of the dressing ingredients together in a small bowl until well blended.
  2. Marinate the salmon. Place the salmon fillets in a large baking dish, skin-side down if it is, and pour the marinade over the fish. Then rub the marinade all over the salmon, making sure to coat both sides of the fish completely. Now, cover the baking dish with plastic wrap and place it in the fridge to marinate for at least 2 hours and up to 24 hours.

Bake salmon

  1. Preheat your oven.  Before you’re ready to make the salmon crackers, preheat the oven to 375°F (190°C).
  2. Bake the salmon. Remove the plastic wrap and place the salmon in a baking dish with the seasoning in the preheated oven to bake for 15 to 20 minutes. Baking times will vary depending on the size and thickness of the slices, so it’s best to check thickness after 15 minutes and start from there. 
  3. Decorate and serve.  Once the salmon is cooked to your liking, garnish with sliced ​​fresh green onions and serve immediately. Serve this dish over some steamed plain rice, cauliflower rice, or with steamed vegetables like broccoli and cauliflower.

How do you know when salmon is cooked?

The easiest way to tell when salmon is properly cooked is when you press it gently with your finger and it should flaky nicely. If salmon is overcooked, it will be dry and tough when eaten. Using a meat thermometer will also ensure that your steak is properly cooked. The temperature of cooked salmon should be above 110°F but below 145°F.

Can I use individual salmon fillets?

Yes! Simply use 1 to 1½ pounds of salmon fillets in place of one large fillet. Ideally, you want all steaks to be about the same size for even cooking. Also note that cooking times can vary slightly, so check your steaks a little early.

Can I grill salmon?

Yes! You can prepare grilled salmon, but I suggest using salmon with the skin on and the grill grates well oiled. Just season the salmon as the recipe says, but when you’re ready to grill, remove the salmon from the marinade and place it on the grill, skin-side down. Never weld side down and never try to turn it over or it will fall apart. Then grill the salmon over medium heat with the lid on until cooked through, which should take about 10 to 15 minutes depending on how you like your fish. 

Can I marinate salmon overnight?

Yes! You can soak the cracked salmon overnight which makes for a great meal. However, I don’t suggest soaking the fish for longer than 24 hours because it will eventually start to decompose and become mushy due to the salt in the soy sauce.

Expert tips

  1. Soak longer.  For the most intense flavour, you should marinate the fish for at least two hours in the spicy salmon marinade. The longer you leave the fish to marinate, the more layered the flavor will be. 
  2. Handle with care.  Salmon is delicate and can break easily, so be careful when placing it in a baking dish and rubbing it with the marinade.
  3. Make it spicier:  You can use as much sriracha and ground chili pepper as you like in this recipe. Or you can use less. How well you season this salmon is entirely up to you.

  • 1/2  teaspoon fresh ground black pepper
  • 2 green onions (chopped)

For Marinade

  • 3 cloves garlic (minced)
  • 1 teaspoon fresh ginger (minced)

  4. You can store leftover firecracker salmon in an airtight container in the refrigerator for 2 to 3 days or in the freezer for up to 2 months! To reheat, put the salmon in the microwave for about 3 minutes on medium power or in the oven at 350°F (176°C) for about 10 minutes.
